Watermelon Barbecue Sauced
1 cup diced seedless watermelon
1/2 c ketchup
2 TBSP fresh lime juice
2 TBSP dijon mustard
2 TBSP balsamic vinegar
1 TBSP light corn syrup
1/2 tsp tabasco sauce
1/2 tsp kosher salt
1/4 tsp black pepper
1/8 tsp red pepper flakes
Puree watermelon in blender. Strain through a sieve. Discard solids. Simmer watermelon juice, ketchup, lime juice, dijon, vinegar, corn syrup, tabasco, salt, pepper, and pepper flakes in a small saucepan for 20 minutes.
